Blueberry Crumble

After making our outstanding Pineapple Upside Down Cupcakes, Sydney was inspired to bake more in the kitchen. So today after church Sydney became a mini-me and donned her apron for another yummy creation! (And yes, I am seriously going to double my Weight Watchers workouts!)


I had some organic blueberries in the freezer that I had purchased at Costco for another recipe. But since I bought them at Costco, I got double the amount I needed. No problem, because my friend Jen posted a great recipe on her blog that I had been dying to try. It was ambitious for Sydney but I knew she could handle it!


So here is a picture of our little chef after she made her "crumble". She did a great job considering I don't currently have a pastry cutter. (Good thing I am going to a pampered chef party next week) We used two butter knives today though and it worked pretty well. Sydney read the directions and followed them to a "T" measuring and pouring everything herself. Here she is packing the bottom layer for the bar.

(p.s. Adams sunburn is from working in the yard yesterday, poor baby)
Can't wait for these babies to cool to enjoy.
Or I read you can eat them warm with vanilla ice cream!

The recipe courtesy of Jen White:

1 C. white sugar
1 tsp baking powder
3 C All purpose flour
1 C cold butter
1 egg
1/4 tsp salt
zest and juice of 1 lemon
4 C blueberries
1/2 C white sugar
4 tsp cornstarch

Preheat oven to 375 degrees. Grease 13x9 pan. In a med bowl stir together 1 cup of sugar, 3 cups of flour and baking powder. Mix in salt and lemon zest. Use a pastry cutter to blend in butter and egg. Dough will be crumbly. Pat half the dough into pan. In another bowl, stir together the sugar, cornstarch and lemon juice. Gently mix in the blueberries. Sprinkle the blueberry mixture evenly over the crust. Crumble remaining dough over the berry layer. Bake in oven for 45 min until top is golden brown.
