Pineapple Upside Down Cupcakes

I love Family Fun magazine. If you have kids, this is just the magazine for you! Its not Parents magazine, that magazine is definitely for Jack's age group thru preschool. No, Family Fun is for older kids. Lots of fun ideas in every issue. Craft, tips, games, and recipes. It's where I got all the directions for Sydney's cutie pie birthday cake!

Well, when this months issue came, I has tickled because I knew it would have something great inside for Syd and I to do this summer. And it did! Yay!

What I found was a recipe for Pineapple Upside Down Cupcakes. Kid friendly directions for these yummy little summer treats. And they are made from scratch. No cake mix involved. (I usually just 'enhance' a cake mix these days.)

Let me just tell you, they are easy as pie to make. Sydney helped and they turned out sooo delicious! Adam was in hog heaven. Don't they look yummy?


Sydney picked off the pineapple and cherry (go figure) but ate the rest and licked her fingers. And with pineapples on sale at Spencers for $0.99 each, they were super cheap to make. I bet you already have all the ingredients in your pantry.

I just saw your comment about the 4th. I was in town with the girls but for only a couple days. We celebrated my mom's 60th, it was a surprise. The weekend was really full and over too quickly. We're heading to Claremont in September when Lance returns from his mission. Maybe then?
